Acorn flour pancakes8/16/2023 I noticed that the acorn flour is heavy and requires less. A bit heavier than a buttermilk Pancake, with a grittier texture. Don't let your pan smoke or the outside will overcook before the inside is finished. My regular crepe batter is 3-2-1: 3 eggs, 2 cups milk and 1 cup (wheat) flour. Acorn flour Pancakes are actually quite good- a bit nutty in flavor, a touch bitter if the acorns werent fully mature before drying and grinding, or werent soaked long enough to remove all or most of the tannins. It will take a little longer to cook than a traditional pancake would. Note: Since stove top temps vary, check to make sure the underside is done before flipping. I usually make ours on an electric griddle set around 325-350 degrees Fahrenheit.
